Weekly Market Update for 09/04/26

Here is a look at the markets:
Eggs:
Just when you thought the shell egg market was at the bottom…..the large market fell another .03/dozen this week. Demand is quiet on both the retail and foodservice sides heading into the holiday weekend. We have inventory on cage free.
We are still seeing freight challenges that are impacting inbound costs. With the DOT brake inspection week coming to an end, we are hopeful to see less of a negative impact on our industry!
Butter:
The market remains quiet. When will we see industrial demand kick in for the Q4 baking season? Last year at this time the market fell to just over $2.00/lb after hovering in the $2.30-2.40 range most of the summer. Is past week we saw the market briefly dip below $1.40! High Desert is still struggling with production, mainly on unsalted solids (14171). We did run short again but the next truckload is due in on 9/8 as lead times are exceeding 5 weeks! Please sub Country Maid in the meantime. High Desert salted solids (14170) are a value again this week. On bulk unsalted butter, the best value is on Oatka code 40690. On butter cups, please consider using the Sommer Maid label (40495, 40500).
Cheese:
The block market remains a broken record as the market trends lower yet again! The best value on sliced American is Dinner Bell label sliced processed American cheese (standard of identity with the real seal!). We have 160 white (code 40258) and 160 yellow (12212) along with white loaf (13813) and yellow loaf (13807). Inventories on Bongards sliced American are good at this time. On cream cheese, we will be running out of Hahn’s 1oz cups (40606) within the next couple of weeks. Franklin Foods was purchased by Schreiber, so we will be bringing in Sommer Maid cream cheese cups (40609) along with 36/8oz cream cheese bars (40608) in 2 weeks. On Friday 9/4, we will be receiving our first shipment of Sommer Maid goat cheese from our new supplier! We will have inventory on 2/2lb goat crumbles (tray pack, code 40472) along with 10.5oz goat logs (40471) that we have been out of for some time.
Fluid Dairy:
Prices for September are lower on heavy cream, half & half, sour cream and cottage cheese. This week we have attractive pricing on Sommer Maid half & half (40279) as well as 40% heavy cream (40276). There will be a price increase on those items for the week of 9/14.
