Eggs:

No change this past week with large/XL. Retail demand never materialized this week and foodservice demand was reduced due to holiday week. Mediums did go up .04 from last week. We have more cage free due in on Tuesday.

Butter:

The market continues to be uninspired. New Zealand butter is also trading lower while the EU is seeing higher prices. How much lower can the U.S. market go? It seems like there is an unlimited amount of butter available in the U.S. despite good domestic demand.  However, U.S. export in July fell below prior year for the first time in the last 25 months! High Desert seems to have caught up with orders and our inventories are ample on salted and unsalted solids. On bulk unsalted butter, the best value is on Oatka code 40690. On butter cups, please consider using the Sommer Maid label (40495, 40500).

Cheese:

The block market seems to be leveling off and may finish around the same number as last week. U.S. cheese exports in July set another record high, the 9th record high in the past 15 months! The best value on sliced American is Dinner Bell label sliced processed American cheese (standard of identity with the real seal!). We have 160 white (code 40258) and 160 yellow (12212) along with white loaf (13813) and yellow loaf (13807). Inventories on Bongards sliced American are good at this time. On cream cheese, we will be running out of Hahn’s 1oz cups (40606) sometime in the coming week. We will have Sommer Maid cream cheese cups (40609) along with 36/8oz cream cheese bars (40608) arrive on September 18.  We have received our first shipment from our new Sommer Maid goat cheese supplier. Please check out the value on the 2/2lb goat crumbles (tray pack, code 40472) along with 10.5oz goat logs (40471) that are back in stock. 

Fluid Dairy:

Prices for September are lower on heavy cream, half & half, sour cream and cottage cheese.
