Weekly Foodservice Market Information from Honor Foods

Dave’s Weekly Market Update for 08/08/25

Valuable insights on the latest market price changes for eggs, butter, cheese, and cream products.

Shell Eggs:

The egg market is seeing a major correction.  Supplies are improving slightly, but demand has fallen off considerably, which is typical for this time of year.  Note we can offer better pricing on the Sauder label shell eggs this week.  We are looking to push the 30 doz XL (14394) and large loose (14472).  On liquid eggs, please note that the attractive price on the Newburg label 15/2lb (13953).  We haven’t seen any shortages on Papetti label liquid eggs (16974) in nearly a month.  Inventories are good.

Butter:

The market continues in an erratic pattern.  Over the last month, we have seen a high of $2.62 and now a low of $2.40.  It is a much different story than last year’s high numbers!  Enjoy the dip before Q4 holiday demand kicks in!  On butter cups, our supplier has had production issues with the Sommer Maid label, so please substitute with the Honeybrook label (9447 on solids cups and 40498 on whipped).  It may be several weeks before new packaging arrives at Sommer Maid.

Cheese:

It has been an active week for the cheese markets, with the average up $.12. The block was at $1.705 last Friday and closed Thursday at $1.825.  Prices are higher for next week on cheddar, mozzarella, and provolone.  The barrel cheese market has also been active, not that anything appears to be traded off it any longer.  We are holding our prices on Hilldale, Bongards, and Sommer Maid labels for another week.  Look for lower cream cheese prices in the weeks ahead.  Check out the attractive price on High Desert bulk cream cheese (14350).  We have another truckload due in on Monday, 8/11.

Dairy:

Fluid cream and cultures did increase slightly for August. We have an aggressive price on Dairy Star aseptic 360ct creamers (6603). Note that Cabot has had production issues the last couple weeks on 6/5lb cottage cheese (12272).  We are being told that the situation is improving, and noticed that on POs received early Friday morning, we were filled at 75%.
