Each week Honor Foods Dairy Specialist David Albert provides you with Dave’s Weekly Market Update, with some valuable insights on the most current market price changes on eggs, butter, cheese, and cream products.

Eggs:

The egg market fell slightly earlier in the week but seems to have leveled out at the moment.  Inventories seem balanced after the opening of schools. We probably will remain around this level until holiday baking begins and we will probably see an uptick in the market.

Butter:

The butter market is on fire this week. We had a .20 increase this week and people were bidding it up and there were no offers or sales yesterday with 12 bids for loads. I interpret that to mean we have more to go. Many California dairies are maxed out with no offerings until much later this year after the holiday demand is over. The possibility of last year’s record high market being repeated certainly exists. 

Cheese:

Cheese on the other hand is correcting rapidly downwards. We had big drops both in Block and Barrel pricing today. You will be ahead of the curve on what you buy this week! The close on both was lower than the averages so chances are next week prices will drop further.

Cream Cheese and Sour Cream:
