Each week Honor Foods Dairy Specialist David Albert provides you with Dave’s Weekly Market Update, with some valuable insights on the most current market price changes on eggs, butter, cheese, and cream products.
Eggs:
The egg market did not change again this week but is showing signs of weakness. The extra large market has dropped some. All large and XL eggs are based on the large markets, so no prices have moved yet.

Butter:
Last week we broke all time high records and this week has really crushed them! There was only 1 load of butter sold this week at the CME. People are vying to buy butter but no one is selling. It is really hard to guess what the top will be or when someone will want to take profits and sell at the exchange. We are certainly in uncharted waters but it does not seem to be over. On another note we are now stocking High Desert Milk butter.

This is a USDA AA butter and we have it in salted as well as unsalted solids. We are offering .05 off per lb as an introductory offer. We have replaced our Beaver Meadow solids with these. This is a better option as it is USDA AA shielded and the other was not. It is also kosher. We hope you will try this new offering from Honor Foods.
Cheese:
We dropped both Block and Barrel pricing this week. Barrels actually rose some and I believe had reached the bottom. If nothing changes, Blocks will drop slightly as the close is lower than the average. I feel we are getting to more seasonal averages.
Cream Cheese:
Cream cheese prices are also rapidly rising following butter to a degree. I was talking to Schreiber today who is one of the nation’s largest producers, they are starting to face shortages as demand is so high that they cannot meet the demand. Remember those shortages a few years ago? Be prepared as it could get bad again. This demand on cream to produce this might be helping to drive up the butter pricing also. The 4th quarter is always when the demand for butterfat is at its highest.
