Each week Honor Foods Dairy Specialist David Albert provides you with Dave’s Weekly Market Update, with some valuable insights on the most current market price changes on eggs, butter, cheese, and cream products.
Eggs:
This has been the longest stretch of a level egg market that I can remember. Steady as she goes!

Butter:
Butter rose again this week with moderate movement at the CME. We will be up .04 from last week. I have read that the fact that the butter market was over $3.20 last year has some people buying at these levels to avoid possible spikes in the late Summer to Fall. I still do not expect anything major in the way of movement. Butter is at the higher end of its recent trading range.
Cheese:
Blocks rose slightly after months of decline with only 10 loads changing hands this week. Barrels dropped again and are now slightly lower than the Block. This has been an active week for Barrels with almost 70 loads changing hands so far this week. The markets are significantly lower than usual for the Summer. Milk is still readily available and as of last week was selling well below class in the Midwest.
Cream & Cream Cheese:
Cream has been readily available in recent weeks. The volume of cream cheese has spiked and we will be fully stocked again as of tomorrow. We will probably see an uptick in pricing as butter has been creeping upwards and is the cost basis for both of these items.
