Sommer Maid Sweetened Condensed Milk:

We have a great supply of this sought-after bakery item. It is packed in 50 lb pails and there are 36 per pallet. Please ask your salesperson about this new item.

Eggs:

The egg market is out of control. There is excessive demand from foodservice as well as exports to Canada and interest from South Korea. The bird influenza has become worldwide, further driving markets upward to unprecedented levels. Yesterday there were 116 offers to buy on the open market and only 12 offers to sell. The increases have been more aggressive in the past few days indicating that there is more to come. I can only imagine when this market begins to correct itself. Cage free eggs also rose this week and we cannot get enough to satisfy the demand in Mass where it is mandated.

Butter:

Butter took a good drop today after staying very high even after the big retail holiday push. The last time it did this it bounced back upwards within a few days. I do not feel this will be the case this time. A note on Cabot Bulk butter cubes. Both Honor and Cabot are sold out on these until at some point in January. We do have Sommer Maid cubes to fill that void.

Cheese:

The Blocks dropped slightly this week and the Barrels firmed up. I thought that Blocks would drop to close that gap but that was not the case this week. Blocks did drop today, so maybe next week the gap will close.

Land O Lakes is still allocating the Hilldale slices and we can not get enough to go around. 120 count has not been as bad as the 160 ct. 

Fluid Creams: 

We, like all others in the North East are struggling to get enough product to fill all the demand that exists. 40% seems to be in a little better shape for us than the 36%.

Half and half quarts are in good shape as of recently. We have an excess of aseptic creamers as the volume has dropped. If you use them, please have a conversation with your salesperson as we want to move these.
