Dave’s Weekly Market Update – May 21, 2021

What a week! TGIF!

Eggs:
The egg market is starting to firm up. Prices have not moved yet, but inventories are coming more into balance and shortly the market will increase.

Butter:
Butter remained firm this week and ended up the same as last week.

Cheese:
The cheese markets are correcting as inventories are building. Reports are that the foodservice sector has refilled the pipeline and now stock levels are growing. There was a lot of activity at the CME this week with both markets dropping double digits, I expect there to be some more downward movement before the markets settle down.
