Each week Honor Foods Dairy Specialist David Albert provides you with Dave’s Weekly Market Update, with some valuable insights on the most current market price changes on eggs, butter, cheese, and cream products.


Eggs rose more than I predicted but I am hearing that spot loads are starting to appear which should cause the market to turn around. The Easter push is over as all those loads have shipped. As long as A1 influenza does not appear in the Spring migration routes, we should see eggs go lower in price. Hopefully I am more accurate than last week.

Butter is down .03 from last Thursday. It did bounce up yesterday but dropped back today. More of the same to come I believe.


Both markets dropped some this week with good drops today. If nothing changes the markets will be lower next week as the close is lower than the averages.  We are seeing an early Spring flush bringing more milk into the marketplace. Manufacturers are benefiting from milk premiums going for under the class 3 market by about $1.50 a hundred weight. In my eyes, cheese is cheap now and supplies outweigh demand. The U.S. has the cheapest cheese, and this could spur some export activity and firm up the markets some. 

With the Butter market trending as it has, we are seeing increases in cream cheese now and expect fluid cream to rise also next month.
