Each week Honor Foods Dairy Specialist David Albert provides you with Dave’s Weekly Market Update, with some valuable insights on the most current market price changes on eggs, butter, cheese, and cream products.

Eggs:

Eggs still have not moved, but with extreme heat we may start to see some upward movement. 

Butter:

The butter market quieted down this week with lower volume trading hands at the CME. We did have a slight uptick, but it did back off some today. If it drops, I do not expect much due to the heat we are facing in many parts of the country. 

Cheese is on fire!

Both the Block and Barrel have moved up substantially. Heat may be a factor, but the fact that we were so cheap recently that it had to go up is also playing a huge role in my eyes. With the market closing so much higher than the averages, pricing is poised to go much higher next Thursday. A good time to build some inventory!

Cream & Cream Cheese:

Due to rises in butter we will see an increase in cream for next month. I am guessing about .07 a qt on heavy creams. Cream cheese is also going up slightly for next week also.
