Each week Honor Foods Dairy Specialist David Albert provides you with Dave’s Weekly Market Update, with some valuable insights on the most current market price changes on eggs, butter, cheese, and cream products.

Eggs:

The market turned around this week as fears of a larger outbreak of the bird flu is spooking the market. A farm in Ohio lost 600,000 birds which is not a lot of birds. The fear is that it is located near many large farms and that it could spread. There are about 20 million more birds than this time last year so there are plenty of eggs, People are holding back due to the outbreaks. Came January farmers put many birds out to molt and cull older birds. Unless there is a larger outbreak, my guess is that we will see more of an increase than a collapse. Let’s see if the Ouija board is working or not.

Butter:

The butter market started dropping this week after the holiday push. All the retail orders have shipped so demand should slow down. It is hard to guess what will take place. Last year it dropped to $2.38 on December 28th then rose some early in January. Late January it dropped back to $2.2675 and that was the low of the year. 

Our High Desert USDA AA butter solids are back in stock and are value priced for you and your customers. 

Cheese:

Both the Block and Barrel bounced around since my last report, but both have ended up lower. Again, it is really hard to guess as it has been a bouncing ball as of late. All labels of Swiss cheeses are all coming down for next week also. 

Just a reminder that Cabot has halted production on many 10 lb cheddars, pepper jack and monterey jack. Also, they stopped on muenster. We have substitutions to offer you to fill these voids.

Cream:

Fluid cream is in good supply as holiday demand ramps up! We have plenty in both Golden Sunshine and Sommer Maid labels. Do many of you use qts of light cream? We carry it but feel we should sell more of it.
